Sweet Potatoes

So you think this is just a Thanksgiving food!  Well, that's really how I always thought of sweet potatoes, but no more!  I may very well become the sweet potato advocate for the southern region.  I decided to check into this vegetable to see just what nutritional values it has.  Wow! Rich in Vitamins A and C with protein, manganese, copper, potassium, iron, Vitamin B6, and fiber, this little bundle of goodness has antioxidant and anti-inflammatory properties.  And the deeper the color of orange, the better they are for you. And they are so cheap to buy.  Which makes them an even better value.  So, I will be adding sweet potatoes to my diet weekly, not just once a year.  I am sold!
